Jason Black takes Hong Kong’s Shore Steak to Gourmet Abu Dhabi 2013

Shore Steak’s Executive Chef Jason Black has been invited from Hong Kong to join a star-studded line-up of international celebrity masterchefs at Gourmet Abu Dhabi, the UAE capital’s annual haute cuisine festival to be held from 5th – 20th February 2013.

The chef behind the food at Shore Steak and sister venue The Salted Pig at L Place, Central is showcasing his signature cuisine at the 16-day extravaganza across 20 leading restaurants in Abu Dhabi.

Along with Shore’s Head Chef Desmond Yau and Sous Chef A Wai, Jason is presenting a bespoke menu at the renowned Blue Grill at deluxe hotel Yas Island Rotana – Abu Dhabi’s premier entertainment hub from 12th – 14th February.

The menu features Pepper-Crusted Beef Tenderloin with snail croquettes (a David Blackmore Wagyu), to Lamb Loin on Grilled Polenta, Olive-Oil Poached 42-degree Scottish Salmon and Slow-cooked Herb-Roast Chicken.

The culinary showcase also extends to gourmet appetizers such as Butter-Poached Asparagus with ‘Sous-Vide’ Egg, Roasted Butternut Risotto with Goat Cheese, and Cauliflower ‘Vichyssoise’ with Scallop Tartare and Oscetra Caviar, as well as Shore’s signature desserts, including a Caramelized Banana and Vanilla Tart.

Guests will be able to experience part of the UAE’s annual cuisine festival in Hong Kong at Shore Steak with the same menu being showcased immediately on the culinary team’s return, for a limited period from 25th February – 8th March, with items featuring on the lunch set menu, and dinner specials menu.

Chef Black was born in the North East of England and worked in South Africa, the United States and Australia. He has worked in Hong Kong since 2006, creating both Zest and Frog Face Fish restaurants. He completed a short study at the prestigious French school of culinary arts, ESCF Ferrandi in Paris, with a “stage” at Pierre Herme.

He has been responsible for the food at Shore since the venue’s inception, and recently created the new European farmhouse-style venture, The Salted Pig, for Shore Hospitality. He believes in timeless classics rooted in solid, honest cooking that people can “put a knife and fork to”.

Presented by Abu Dhabi Tourism & Culture Authority, Gourmet Abu Dhabi is a lifestyle gastronomic extravaganza that aims at promoting the emirate’s emergence in the world of fine dining, underlined by the glitzy newcomers including British celebrity Chef Gary Rhodes. Now in its 5th year, the festival also showcasing more than 15 renowned international masterchefs including 2-Michelin-Star icon for new Andalusian cuisine Dani Garcia of Marbella, 2-Michelin-Star Michel Rostang of Paris, One Michelin-starred Cyril Lignac of the popular French series “Oui Chef!” and one of Japan’s hottest young chefs Shinichiro Takagi.
